The one with green nori flakes (aonori) is also wonderfully delicious in a different way. I am always saying the same thing and I apologize, but it goes well with rice. From all the recipes we’ve introduced so far, this one competes for first or second place in deliciousness, and it’s a dish I absolutely want everyone to try. I think it is truly game-changing—it will revolutionize the way you think about carrots.━━━━━━━━━━━━━━ For Masaaki-sama to say this carrot burger patty “competes for first or second place in deliciousness” and that we should absolutely try it—we can only imagine how exceptional the flavor must be! “This might as well be a cookie” and yet it “goes well with rice”—what kind of deliciousness could this possibly be? We are brimming with curiosity! This gem of a dish that Masaaki-sama couldn’t help but express as “the exploding sweetness of the carrot.” Mami-okusama made three varieties: in addition to plain, there are the green nori flake version and the miso green nori flake version. Regarding each one: “The plain is incredibly delicious too, but the combination of carrot and green nori flakes is also perfect. Then the miso-nori version, which adds the taste of miso to the green nori flakes flavor, brings out richness and is extremely delicious.” The only thing left for all of us to do is experience this game-changing dish together!! Ingredients• Sesame oil (for pan-frying the patties) … 1 teaspoon• Salt (for steaming carrots) … a pinch Plain flavor:• Carrots (steamed and mashed) … 200g• Rice flour … 40g• Medium strength or all-purpose flour … 60g• Water … 40g• Salt … a pinch Green nori flakes version (add the following to plain):• Green nori flakes (aonori) … 1 teaspoon• Salt … a pinch Miso green nori flakes version (add the following to plain):• Miso (preferably red miso) … 1/4 teaspoon• Water … 1/2 teaspoon (to dissolve the miso)• Green nori flakes (aonori) … 3/4 teaspoon Instructions① Cut the carrots into relatively small pieces, add a pinch of salt and mix throughout. Let sit for about 10 minutes.② Steam the carrots until soft, then mash.*The key to mashing is to leave some texture.③ Mix the base ingredients together, divide into thirds, leave one plain, and add the respective ingredients to the remaining portions for seasoning.④ Shape into your preferred form, removing air pockets.⑤ Heat a frying pan (cast iron if available), add 1 teaspoon sesame oil, and arrange the patties.⑥ Cook over medium heat for 3–4 minutes, and once they develop a nicely browned color, flip them over and cover with a lid.⑦ Cook over low heat for 2–3 minutes, remove the lid and cook a little longer to evaporate the moisture, and done! ***About Mami-okusama (Mami Okada)She was born in Aichi Prefecture and grew up in a farming household. She is also known as “Japan’s vegan beauty.” During her studies at University of Tsukuba, she became actively involved in volunteer activities such as refugee support.
